Fabulous! My two new recipes of the week.

Ok so you don't know me YET! But people who do not me know that I try two new recipes a week. So here they are and they were both delicious. The burger was flavorful and moist. The salad was crisp and fresh. Try them out and tell me what you think.

Stuffed Turkey Burgers by Ellie Krieger

Ingredients
1 1/4 pounds lean ground turkey breast
1/2 cup chopped roasted red peppers
1/2 cup shredded part-skim mozzarella cheese
1/4 teaspoons salt
Freshly ground black pepper
Directions
Divide turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Sprinkle 4 of the patties with 2 tablespoons red peppers and cheese, and top with remaining patties, working the turkey around the edges to seal burgers closed. Season with salt and a few grinds of pepper. Grill or broil until cooked through, about 5 minutes per side.


Orange, Radish and Mint Salad

Ingredients
4 navel oranges
1/2 red onion, thinly sliced
8 radishes, halved and thinly sliced
1/4 cup fresh mint leaves, torn
2 tablespoons olive oil
1/4 teaspoon salt
Freshly ground black pepper
Directions
Cut the top and bottom off of each orange. Stand the orange on 1 end on a cutting board and, following the curve of the fruit, cut away the skin and pith of the orange. Cut each orange section out of its pith.
In a medium bowl toss together the orange sections, onion, radishes, and mint leaves. Drizzle with oil and season with salt and pepper.

  1. Wow! That is cool how you try 2 each week. Those of us who are cooking challenged (lol!) appreciate recipes and your thoughts on how they came out.
